Kaiseki cuisine
"Kaiseki (懐石) or kaiseki ryōri (懐石料理)" is a traditional multi-course Japanese dinner. The term also refers to the collection of skills and techniques that allow the preparation of such meals, and are analogous to Western haute cuisine.
There are basically two kinds of traditional Japanese meal styles called kaiseki or kaiseki ryōri. The first, where kaiseki is written as 会席 (and kaiseki ryōri, 会席料理), referring to the fancy meal served at banquets. The other is written 懐石 or 懐石料理, referring to the simple meal that the host of a chanoyu gathering serves to the guests, and which is also known as cha-kaiseki (茶懐石).

Vegetarian Noodles (Yakisoba) : ยากิโซบะเจ
ส่วนผสม
- เส้นบะหมี่ไทเป 250 กรัม
- โปรตีนเกษตรที่แช่น้ำจนนิ่ม 100 กรัม
- เห็ดหอมผ่าครึ่ง 100 กรัม
- แครอท หั่นเป็นเส้นๆตามยาว 100 กรัม
- ถั่วลันเตาตัดหัวตัดท้าย 100 กรัม
- กะหล่ำปลีหั่นเป็นชิ้นพอคำ 100 กรัม
- มะเขือเทศผ่าสี่ 2 ลูก
น้ำตาล 1 ช้อนโต๊ะ
โชยุ 3 ช้อนโต๊ะ
วิธีทำ
1. ตั้งกระทะให้ร้อน ใส่น้ำมันลงไปเล็กน้อย โปรตีนเกษตรลงไปคั่วให้เหลือง
2. ใส่เส้นลงไปผัด จะใส่น้ำไปนิดหน่อย ปรุงรสด้วย น้ำตาล โชยุ ใส่ผักทั้งหมดผัดให้เข้ากัน
3. ตักเสิร์ฟ

Ingredients:
- 250 g Taipai Noodle
- 100 g imitated meat (small size), soaked
- 100 g halved shitake mushroom
- 100 g julienned carrot
- 100 g pea, discard the top and the bottom
- 100 g bite size cut cabbage
- 2 quartered tomates
1 tbs. sugar
3 tbs. Japanese soy sauce
Directions:
1. Heat up the wok, add little of oil and add imitate meat to stir fry.
2. Add the noodle and a little of water. Season with sugar and Japanese soy sauce and all of the vegetable. Mix well before turning of the heat.
3. Ready to serve.
