ราเมง/ราเมน มิโซะ - Japanese Miso Ramen

ราเมนมิโซะ เป็นที่นิยมโดดเด่นมากในราวปี 1965 เป็นราเมนญี่ปุ่นที่ถูกพัฒนาแบบไม่ซ้ำใคร ซึ่งมีต้นกำเนิดจากฮอกไกโด ประเทศญี่ปุ่น เอกลักษณ์เฉพาะตัวหรือคุณลักษณะเด่นของน้ำซุปมิโซะนั่นคือ มีเต้าเจี้ยวบดที่เป็นองค์ประกอบหลัก ซึ่งจะผสมเข้ากับน้ำซุปไก่หรือน้ำซุปปลา บางครั้งอาจใช้เป็นน้ำต้มกระดูกหมูก็ได้ น้ำซุปที่เคี่ยวจากเต้าเจี๊ยว ซุปนั้นจะได้น้ำซุปสีออกน้ำตาลมีกลิ่นหอมของเต้าเจี๊ยว บางแห่งน้ำซุปจะใส

น้ำซุปมิโซะ จะมีความหยาบของถั่วบดหรือเต้าเจี้ยว ที่ให้ความหอม มัน เค็ม และมีรสเปรี้ยวหวานเล็กน้อย กลมกล่อมของถั่วเหลืองหมัก ถั่วเหลืองหมักที่อุดมไปด้วยไฟโตนิวเตรียน ที่มีส่วนช่วยเสริมสร้างกระดูก ลดอาการขณะเริ่มหมดประจำเดือน จัดว่าเป็นเมนูสำหรับผู้ที่รักสุขภาพไม่ควรพลาด

รสชาติของ ราเมงมิโซะ จะเปลี่ยนไปตามส่วนประกอบ (Toppings) ที่ใส่เพิ่มลงไปในราเมงชามนั้นๆ ตามสูตรเฉพาะของแต่ละร้าน โดยทั่วไปก็จะใส่ ถั่วเผ็ดหรือ tōbanjan (豆瓣醤), เนยและข้าวโพด, ต้นหอม, หัวหอม, ถั่วงอก, หมูสับ, กะหล่ำปลี, งา, พริกไทยขาว และกระเทียมสับ เป็นต้น ส่วนสำคัญอีกส่วนหนึ่งสำหรับ ราเมงมิโซะ นั่นก็คือ เส้นราเมง ที่เหนียวนุ่ม ชุ่มลิ้น ที่ใส่คู่กับน้ำซุปมิโซะแล้วหล่ะก็ ต้องทำให้คุณไม่อาจะลืมรสชาติที่อร่อยสุดๆของ ราเมงมิโซะ ได้เลย

ราเมงมิโซะ ราเมนมิโซะ - Japanese Miso RamenMiso ramen is a relative newcomer, having reached national prominence around 1965. This uniquely Japanese ramen, which was developed in Hokkaidō, features a broth that combines copious amounts of miso and is blended with oily chicken or fish broth – and sometimes with tonkotsu or lard – to create a thick, nutty, slightly sweet and very hearty soup. Miso ramen broth tends to have a robust, tangy flavor, so it stands up to a variety of flavorful toppings: spicy bean paste or tōbanjan (豆瓣醤), butter and corn, leeks, onions, bean sprouts, ground pork, cabbage, sesame seeds, white pepper, and chopped garlic are common. The noodles are typically thick, curly, and slightly chewy.
